Okro soup (African okra soup) is made with okra vegetables cooked in a delicious mixture of palm oil, meat, blue craps, smocked fish and African spices, and simmered to perfection! Okra is also known as lady fingers, gumbo, ochro, or okro. It is a nutrient powerhouse, packed full of vitamins such as folate and vitamin c, and soluble and insoluble fiber.

Okro is a one pot recipe, known for its slimy nature and this might be a turn off for some. This sliminess, known as mucilage, is actually really good for you. okra is a rich source of dietary fiber, minerals, and vitamins and a low calorie vegetable. Known in most West African Countries as Okro, and the French speaking countries as gumbo. It helps to reduce the risk of heart disease, keeps the intestinal tract healthy, and boosts the immune system, among other numerous benefits.

 4 lbs meat
 1.50 lbs smoked turkey
 1 lb smoked fish
 2 lbs red snapper
 6 Blue crab
 3 lbs fresh okro
 1 bunch jute leaves
 2 medium sized tomatoes
 2 habanero peppers (plus extra to put in at the end)
 2 large onions
 2 medium sized shallots
 1 tsp aniseed
 75 g ginger
 1 maggi tablet
 1 cup palm oil
 salt to taste
 1 cup palm oil
