When it comes to West African recipes, jollof rice is a food with many variations. The most well-known of these is probably the spicy one that uses tomatoes and red or green peppers as ingredients. But there are also some other good variations on this theme as well. Here's an example: Curry Style Jollof Rice which has everything we love about traditional jollof rice but with a few added spices (for extra perking up) and lots of deliciousness powder on top.

 4 fl oz rice
 2 fresh tomatoes
 2 chili red bell peppers (tatashe)
 5 scotch bonnet peppers (atarodo)
 3 garlic cloves
 2 onion bulbs
 2 cups coconut milk
 3 cups chicken stock
 ½ tbsp turmeric powder
 ½ tbsp curry powder
 ½ tsp thyme
 1 ½ seasoning cubes
 1 tsp cumin powder
 ½ tsp nutmeg
 ¼ cup vegetable oil
 2 tbsp tomato paste
 Green bell pepper, diced
 Red bell pepper, diced
 Spring onions
 Salt to taste
Ready to get cooking? Kick-start the process by crafting a delectable curry mixture for this recipe's foundation - adding just the right amount of flavor.

In your blender, Add some coconut milk, chopped tomatoes, chili red bell peppers(tatashe),scotch bonnet peppers (atarodo), garlic cloves, some chopped onions, turmeric powder, ground nutmeg, cumin powder, thyme, ground pepper, curry powder, and ginger powder.

Blend all the ingredient until it is perfectly combined and formed into a very creamy puree

Begin by heating the vegetable oil in a large pot or pan over medium heat then add some chopped onions, and minced garlic and saute about 20 seconds.

Add some tomato paste, mush it mix it up with the hot oil, and fry for about 4 to 5 minutes.

Pour the creamy curry blend into the pot. Stir and season with some ground pepper, some chicken bouillon cubes, and some salt. Stir thoroughly.

Add the washed rice into the pot and stir again ensuring that every rice grain is coated with the sauce

Add some chicken stock into the pots to help cook the rice. Give it a good stir to combine ensuring that the rice is fully submerged in the liquid

Add some bay leaves and cover the pot with aluminum foil before placing the lid on top of it. Cook on low heat for about 35 minutes or until rice is tender.

While the rice is cooking you can chop up some of your favorites vegetables to add a pop of color to your rice dish

Add all the vegetables into the pot and stir thoroughly to combine
