East African Salad with Lime and Coriander- This 'katchumbali' salad is served with nearly all meals in east Africa. It's a lovely, fresh and tasty salad to go with any barbecue, meat or side dish. It is different from traditional salads as it doesn't have lettuce!
4 roma tomatoes chopped into pieces
1 Spanish onion thinly sliced
2 Lebanese cucumbers finely chopped medium
1 carrot finely chopped medium
2 limes juiced
1/4 bunch fresh coriander chopped
1/2 cup water boiled
