Viazi karai is a Swahili potato dish that is made out of frying boiled potatoes that have been coated with a spicy batter. They are usually had alongside a tamarind or chili sauce. And they’re arguably one of the most satisfying things you will ever eat. I mean a super crispy exterior and a warm, fluffy interior with a really tasty sauce on the side? Absolutely delicious and comforting.

For the viazi karai
About 10 large potatoes – peeled washed and cut into cub
 1/2 cup of cold water
 10 cloves of garlic, minced
 Finely chopped coriander leaves
 Salt to taste
for the sweet chilli sauce:
2 large tomatoes, pureèd or blended
 1 red onion, finely chopped
Coriander / dhania stems, finely chopped
 1 tsp sugar
 1 tsp paprika
1 tsp cayenne pepper or chilli powder(less or more depending on your chilli tolerance)
