Viazi karai is a Swahili potato dish that is made out of frying boiled potatoes that have been coated with a spicy batter. They are usually had alongside a tamarind or chili sauce. And they’re arguably one of the most satisfying things you will ever eat. I mean a super crispy exterior and a warm, fluffy interior with a really tasty sauce on the side? Absolutely delicious and comforting.

For the viazi karai
Β About 10 large potatoes – peeled washed and cut into cub
Β 1/2 cup of cold water
Β 10 cloves of garlic, minced

Β 1 red onion, finely chopped
Β Coriander / dhania stems, finely chopped
