Once you've prepared all of those tasty ingredients, all it takes is time to simmer sumptuously in its own juices, for the perfect North African tagine.

 3 large eggplants, chopped
 1 large red onion, diced
 2 cloves of garlic, minced
 2 sticks of celery, chopped
 1 tsp cumin powder
 ½ tsp turmeric
 1 can of chickpeas (do not drain)
 10 apricots, chopped
 Salt and pepper to taste
 2 cups couscous
 1 lemon
