Garden eggs stew is a Ghanaian delicacy enjoyed with a variety of starches such as rice, yam, plantain, etc. This rendition of this classic elevates the flavors and brings a slew of textures that literally takes this one to the next level!

 10 garden eggs or an equivalent 1 big purple egg plant
 ½ cup palm oil
 ½ white onion
 ¼ red onion
 1 habanero chili
 1 scallion or spring onion
 small piece of ginger
 2 cloves of garlic
 Small piece of momoni (fermented fish)
 1 cup home made tomato sauce
 10 jumbo prawns shelled, and deveined
 1 grilled mackerel
 1 cup sliced white mushrooms
 1 cup fresh spinach
Garnish
 ¼ red and green bell pepper
 ½ red onion
