Lamb Squash and Apricot Tagine - A Moroccan mainstay, this slow-cooked casserole is flavoured with coriander and ras-el-hanout spices

Β 2 tbsp oil
Β 1 large onion , finely chopped
Β 2 garlic cloves, finely chopped
Β 1 tbsp ras-el-hanout
Β 600 g lamb leg, diced into 2cm pieces, excess fat trimmed
Β 200 g butternut squash, diced
Β 400 g can chopped tomato
Β 500 ml lamb or beef stock zest
Β 1 lemon
Β  small bunch coriander
Β couscous and natural yogurt, to serve
