Marrakech B'stilla by Taste

B'stilla, pronounced pas-tee-ya, is a delicious pie traditionally made with young pigeons for special occasions. This is a simplified version with chicken.

ย 1.60 kg free-range chicken, quartered
ย 2 Spanish onions, finely chopped
ย 1 tsp ground ginger
ย 2 tsp ground cinnamon
ย ยฝ tsp saffron threads
ย ยผ cup fresh flat-leaf parsley, chopped
ย ยผ cup fresh coriander, chopped
ย 2 tbsp olive oilplus extra, to brush
ย 50 g butter
ย 2 tbsp caster sugar
ย 175 g blanched whole almondsroasted, chopped
ย 6 hard-boiled eggs, peeled, chopped
ย Icing sugarto dust
ย Ground cinnamon, to dust
