ย 1.75kg free-range chicken, jointed into 8 pieces
ย 3 tbsp olive oil
ย 1 large onion, chopped
ย 3 garlic cloves, crushed
ย 5cm fresh ginger, finely grated
ย 2 x 5cm cinnamon stick pieces
ย 1 tsp ground ginger
ย 800g skinned and chopped tomatoes, fresh or tinned
ย 1 tsp harissa paste, rose if you can get it (we like Belazu)
ย 300ml chicken stock (see Debbieโ€™s tip)
ย ยฝ tsp saffron strands
ย 2 tbsp clear honey
ย 1 tbsp lemon juice
ย 1 tsp orange blossom water (see tip โ€“ we like Nielsen-Massey)
