 1 tbsp extra virgin olive oil(optional*)
 1 onion, finely chopped (about 2 cups)
 4 garlic clovesminced (about 2 tablespoons)
 1 jalapenocored and finely chopped (about 2 tablespoons)
 2 tbsp 2 inch knob fresh ginger, peeled and minced
 2 tsp cumin
 ¼ tsp cayenne
 1 lb sweet potato, peeled and cut into 1-inch cubes(about 2 cups)
 1 cup water
 1 bunch collard greens (stems removed and chopped)
 fresh cilantro, cooked brown rice, roasted peanuts and lime juice for serving
