South African Traditional Skilpadjies By Crushmag Online


Possibly one of the more dividing traditional South African food out there, but when a skilpadjies – calf’s liver wrapped in caul fat – is made properly, there’s nothing quite like it.
500 g cleaned liver (ask your butcher to do this for you)
250 ml Ratafia
50 g onionfinely chopped
clove garlic finely grated
5 ml thymefreshly chopped
12 pieces of caul fat cut into a square about 12×12 cm
