Sudan Ful Madames (Fava Bean Stew)- This quick bean stew is considered the National dish of Sudan and is served for breakfast. It’s a hearty meal meant to keep you full all day while fasting for Ramadan.

Serve this as a filling side or vegetarian meal with pita bread and/or rice.

 1 lb. fava beans (canned or frozen)
 4 eggs
 3 tbsp olive oil
 1 onion, diced
 5 garlic cloves, grated
 2 tbsp cumin
 1 tsp Salt
 ½ cup water or vegetable stock
 1 lemon, for juice
 1 large tomato, diced
 2 tbsp chopped parsley
