In Zimbabwe, we call this maguru and it is usually mixed with intestines which we call matumbu. This mixture is awesome if especially the intestines are properly cleaned. If they are properly cooked you will enjoy them quite well.

Tripe recipe (maguru/mogodu ulusu) -This is a recipe contain intestines and tripe. Intestines and tripe are a bit fattier so have to get rid of the fat and do not add any when cooking. Best way to remove the fat is by letting it cook fully. let it cool, put the cooked tripe and intestines in a wide bowl, put it in the fridge and all the fat will come up at the top remove it with a spoon.

 

 

 OX Tripe (use any tripe)
 1 onion
 1 bay leaf
 1/2 green, red pepper
 1 tsp curry powder
 1 tbsp BBQ spice
 1 tbsp crushed garlic & ginger
 Salt & pepper to taste
 1 tbsp mixed herbs
 2 chopped tomatoes
 1 thumb size ginger
 Water to boil our tripe
 Vinegar to wash our tripe
