No Instant Pot to make this creamy peanut buttery West African Stew? No problem! Just saute the vegetables in a large stockpot or Dutch oven, add the liquids, and cover and simmer until sweet potatoes are tender. Then, mix in peanut butter and baby spinach.

 1 cup chopped red onion
 1 lb chopped sweet potatoes
 Add fresh garlic, minced 3 clove(s) fresh garlic, minced
 Add fresh ginger, minced 1 tbsp. fresh ginger, minced
 Add crushed red pepper flakes 2 tsp. Hy-Vee crushed red pepper flakes
 Add (5-oz.) pkg. baby spinach
  dry roasted unsalted peanuts, roughly chopped for garnish
 Fresh cilantro, for garnish
