This recipe involves boiling the potatoes, dipping them into a batter/coating made with all-purpose flour then deep-fried to cook the coating. Note that these are different from Bhajias. Bhajias are made using raw, thinly sliced potatoes and the batter is made from gram flour.

 7 medium sized potatoes
 1 tbsp cumin
 2 cloves of garlic
 Fresh ginger
 1 tbsp paprika
 1 tsp turmeric
 1 tbsp coriander
 Salt
 Fresh dhania/ coriander leaves
 2 cups of water
 Vegetable oilto deep fry
Sweet and Sour Ukwaju Sauce
 1 handful of fresh tamarind/ Ukwaju
 3 tbsp honey
 3 tomatoes, blended/grated
 2 cloves of garlic
 Fresh ginger
 1 tbsp paprika
 1 tbsp coriander
 Salt
 Black pepper
 Chili flakes/ fresh chillies
