West African Peanut Chicken By My Recipes


West African Peanut Chicken is served over rice. The original recipe calls for homemade peanut butter. If you'd like to use fresh ground peanut butter, you can grind your own at the grocery store, whirl some roasted peanuts in your food processor, or buy a jar of natural peanut butter.
2 pounds boneless, skinless chicken breasts or thighs, cut into bite-size pieces
3 medium-size onions, minced or pureed in food processor
2 cloves garlic, minced
1 cup water
1 tsp cayenne pepper or red pepper flakes (optional)
½ tsp black pepper
1 green bell pepper, seeded and diced
2 ripe tomatoes, diced
