ZAALOUK FOCACCIA

In a constant attempt to give a Moroccan twist to all my favourite foods, I naturally topped my focaccia withΒ zaaloukΒ (aka best aubergine salad/dip in the world). The end result is super delicious

Β 1 Β½ tsp caster sugar
Β 300 g plain flour and more for flouring
Β 7 tbsp extra virgin olive oil,divided
Β 1 tsp salt
Β 160200 ml warm water
Β One quantity of my zaalouk recipe
Β A handful chopped coriander and crumbled feta to serve
