Akara (West African Bean Fritters) By Curious Cuisiniere

West African Akara is a fritter from West Africa made from black-eyed peas (also called cowpeas). The dish looks strikingly similar to a beignet, but the flavor is quite different.

Savory and spicy. Light and fluffy with a crunchy exterior. Akara black-eyed pea fritters are a much-loved breakfast food from West Africa.
